What better way to welcome back spring ---believe it or not, it will return --- than with a fresh and zesty Latin seafood feast?  Join Amalia as she pulls together unique ingredients to create satisfying surprisingly easy dishes from Central and South America.  Pescado Picante (cod in banana leaves with bell peppers, garlic and olives);  Salmon con Pisco (pan-seared salmon flamed with Peruvian Pisco); Escabeche de Pescado (tilapia with vegetables in vinaigrette sauce); Arroz con Esparragos (asparragus and cheese rice); Dulce de Pepitoria y Ajonjoli (pumpkin and sesame seed brittle).

INCREDIBLE EDIBLES AT THE MN LANDSCAPE ARBORETUM

Ten top chefs, foodies and growers share their favorite recipes and turn our local harvest into great summer eats.  Visit this unique exhibition which explores the energizing links between plants and people.  Includes several interactive displays and juried outdoor art installations.  Bio-energy Frontiers will explore society's efforts to develop new sources of energy from plants.  Incredible Edibles will inspire new ways to "eat yourself healthy" with summer's bounty of Minnesota-grown vegetables, fruits, herbs and grains.  Art with Power will present five juried art installations inspired by the "Powerhouse Plants" theme.  Powerhouse Plants is sponsored by Xcel Energy.

Sure to delight those with an adventurous palate and a taste for Mediterranean Spanish and Latin cuisine.  Menu: Pa Amb Tomàquet ( bread with tomato); Ensalada (frisèe with Garlic-Citrus Vinaigrette);  Paella (rice, chicken and shrimp with saffron, wine, rosemary and vegetables); Fruit cocktail with passion fruit and rum sauce.  Paired with Spanish Cava and Rioja.
