GUATEMALAN CHIRMOL

Charred Tomato and Mint Sauce

About 2 1/2 cups

5 roma tomatoes, charred, chopped

¼ cup of fresh mint leaves, chopped

½ cup onion, small dice

1-2 Serrano peppers, chopped (optional)

Kosher salt

Char on stove top or grill tomatoes until skins blister and tomatoes are soft.  Do not peel them.  Combine all chopped sauce ingredients and season with salt.
