GUATEMALAN STEAK
Grilled Marinated Steak

Serves 6-8

2 lbs. flank, sirloin, or ribeye, divided into 4 oz. pieces

3 oranges, juiced

2 limes, juiced

1 small yellow onion, julienne

1/2 cup canola oil

Kosher salt and freshly ground black pepper

16 bamboo skewers, soaked in warm water

To make the marinade, combine orange and lime juice, onion, oil, salt and pepper.  Mix well.

Marinate steak pieces for 1-3 hours.  Place meat in skewers using two skewers per piece of steak. 

Grill steak skewers for 2 minutes per side.  Serve with Chirmol Sauce (recipe under Salsas and Sauces) on top or on the side.
